Mango and White Chocolate Cheesecake For The 1st Lady of Honduras


A friend of mine asked me to make a cheesecake... "No problem,"  I said.  Then he told me it was a gift for the 1st Lady, the president's wife... Rosa Lobo... I thought about changing my mind, but then I thought, "Why not?" So the cheesecake was made and delivered to my friend... I anxiously wait for comments...

  1. That's very pretty. Would you share the recipe, and explain how you got the white chocolate around the sides? At over 3000 feet in Tegu, I'm supposing you have to adjust for altitude when baking. Would you have made one for Xiomara?

  2. The chocolate is lace... aluminum foil covered with lacy chocolate swirls and then peeled off... when kind of set but not totally set... No adjustments for altitude... actually I don't adjust anything for altitude here.

    As far as the recipe, it is just a plain cheesecake recipe with a little extra flour and the pulp from 2 mangoes... the topping is mangoes boiled with sugar water and then cooled down...

    Would I bake one for Xiomara? If she or a friend of hers paid me to do it, I sure would... I am a fan of both of the Micheletti's... but Xiomara de Micheletti is a class act!

    A friend of mine ordered this one (for pay) to give to his friends Pepe and Rosa...
