July 29, 2010 And Now On To See The Volcanoes and The Lake... Driving Through Guatemala and El Salvador


Just after leaving Copan Ruins, Honduras and just before arriving in Chiquimula, Guatemala... We happened upon this cemetery.  

Notice the bright blue tomb... Metal plaque on the side...


This is recycling at it's finest...  Tin can vases... 


Tombs ready and waiting for new inhabitants...

I know you might think it is weird to take photos of cemeteries, but actually it is cultural.  
I have photos of cemeteries from all over the world...

We passed from Honduras to Guatemala and then on to El Salvador.  

Now on to Santa Ana, El Salvador...

Casa In Aramicina, Honduras On The El Salvador Border

There are many ways to describe Honduras, each zone of the country has it's own special characteristics. The house below is typical of the area where El Salvador meets Honduras. This particular home is located in Aramicina, Valle, Honduras. The bright colors, the tile around the doors and windows all show the El Salvadorean influence in the area.



I love living in Honduras except when it comes to cooking. I miss fresh herbs and spices and being able to run to Dean and Deluca a few blocks from home if I didn't have what I needed.


There are many things which I just can't find here, like fresh mint, fancy cheeses and good BBQ sauce. I have a friend which brings me Chips BBQ Sauce from Little Rock, Arkansas when she comes to visit. Thank you Linda K. Bell!

I grew up in Little Rock, Arkansas and across the street from the Methodist Church where I attended as a kid, there was a wonderful BBQ place called Chips BBQ. Every Saturday night I ate an English Muffin BBQ Beef Sandwich there. I know that sounds like a strange combination, but the truth is the English Muffin holds up much better with tons of BBQ sauce than does white bread. The up side to living in Honduras is that there are several kinds of parsley and "culantro" I think that is cilantro in English. Lots of varities of bananas, many fresh fruits like papaya, mango, guava, pineapple, cashew etc. and all these different fruits are cheap. I buy Calle Lilies at least once a month to place on my table and they too are really cheap. So I complain, but not too be taken very seriously.

Soft Shell Tacos with Avacado Mango Salsa and Oscar Goes To The Hospital For Heart Surgery

Oscar has worked at our farm since a few months after we purchased it in 1994. When he first started working for us he had two children now he has six. When he first started working for us he was 24 now he is 39 almost 40. When he first started working for us he was just another bricklayer, but 15 years later he is like part of the family.

In December of 2007, Oscar suffered a heart attack. He is one of those employees that everyone would love to have working for them because he NEVER misses work, he never complains and he is always compliant. One day he didn't show up and the next day he didn't show up either. By the third day I was concerned. I went to his home to see what was wrong. No telephone! Oscar's legs were swollen and he couldn't walk. He said his knees hurt, his chest hurt, he was coughing a dry cough and he thought he had "dinge".

Mango Avocado Cucumber Salsa


Ingredients:1/2 c. fresh cilantro, chopped

1/4 c. fresh mint, chopped

1 ripe avocado, peeled and cubed

1 ripe mango, peeled and cubed

1/2 cup small red onion, halved and thinly sliced

15 spring peas cut into small pieces

½ of a large cucumber peeled and cubed

5 green onion, white and light green portions diced

juice of 2 limes

1/4 c. olive oil

1 large garlic clove, minced or pressed

1/2 tsp salt

1/2 tsp freshly ground pepper

1/4 tsp chili powder

1/4 tsp smoked paprika

Directions:-In small bowl, combine avocado, mango and juice of 1/2 lime.

-Toss and set aside.

-In separate small bowl, combine remaining lime juice, garlic, salt, pepper, chili powder, and paprika.

-Whisk to combine and while whisking constantly, slowly drizzle in olive oil to emulsify.-In large serving bowl, combine all other ingredients

-Top with drained mango and avocado and serve immediately

Excellent as a refreshing salsa on tacos.
